Fitness influencer Rachael Finch reveals her huge lunch in latest healthy cooking video – after clapping back at critics

Rachael Finch gave insight into what she eats for lunch every day in her latest healthy cooking video.

The 36-year-old fitness influencer regularly posts cooking tutorials on Instagram and shared a video on Thursday in which she prepares a large lunch plate.

The footage shows her preparing a large plate of healthy food, including spinach, white rice, a portion of scrambled eggs and avocado.

Rachael finished her dish with a drizzle of oil and herbs and shared her nutritional priorities when putting together her large lunch plates.

She said she always focuses on a dish that she can prepare quickly and that contains a variety of vegetables, proteins and carbohydrates.

In a caption, she explained: ‘#WFH mix + match lunch idea. I’m thinking: Eat veggies first, quality protein and enough of it, carbs that are easily digestible in my body, quality fats, use up leftovers, how I can make it in 5-10 minutes.

“What do you have planned for lunch today, at the office or at home? (Secretly my favorite time of day)?”

Fans of the model shared their thoughts on the dish in the comments, with one of them surprised by the large size of the healthy meal.

They wrote, “Are you really going to eat all that for lunch?” to which Rachael simply replied, “Lol, yes.”

But other fans were more enthusiastic about the dish, with one writing: ‘Looks so delicious!’

A second responded enthusiastically: ‘You are truly an example for healthy eating, I love all your health products.’

While a third said: ‘Yummy,’ and a fourth added: ‘All my favourite dishes.’

Rachael regularly shares her cooking videos on Instagram, but recently had to hit back at cruel internet users who accused her of “underfeeding” her children.

“Almond mother” is a pejorative term for a mother who forces unhealthy and disordered eating habits on her children. It is often used to refer to parents who are “obsessed” with food.

Outrage arose after she shared a video showing herself making “naked burgers” for her two children using lettuce leaves instead of buns.

Rachael was furious, saying the unfounded accusation was downright ‘hilarious’ given she has been critical of critics of her healthy meals.

Rachael shared a photo of herself snuggling up to her two children, writing: ‘Someone officially called me an ‘almond mom’ this week.

Several of Rachel’s followers agreed that the ‘almond mother’ label was unwarranted and joined in droves to support the star.
