Experience and Skills Required:
- Minimum of 2 years of experience in food production and commercial kitchen settings.
- Ability to manage, supervise, and train junior kitchen staff.
- Solid understanding of food production, health, and safety regulations.
- Physical ability to stand for extended periods and work under pressure.
- Excellent organizational and effective communication skills.
Education Required:
- Diploma or Certificate in Food Production, Hotel Management, Culinary Arts, or a related field.
- Food handler’s license.
Key Accountabilities:
- Food preparation and presentation.
- Maintain cleanliness and sanitation of the kitchen and equipment.
- Ensure proper food storage practices are followed.
- Guarantee that all food produced meets quality standards.
- Organize workstation and oversee stewards, guiding them to maintain discipline and good hygiene practices.
- Train new and existing stewards on hygiene and kitchen standards.
- Communicate kitchen operations updates to supervisors, providing feedback on challenges and issues within the unit.
- Report to duty punctually in proper, clean, and pressed uniform.
- Prepare staff meals, including breakfast and lunch.
- Conduct daily and monthly stock takes.
- Relieve the Chef de Partie when required.
- Inspect and clean fridge and freezer before production, recording temperatures as needed.
- Ensure timely kitchen operations in alignment with Café 748 quality standards.
- Accurately measure ingredients for senior kitchen staff.
- Prepare basic salads, sauces, and meal ingredients such as seasoning meats, washing, peeling, and chopping fruits and vegetables.
- Receive deliveries, check quality, and verify all items ordered are delivered.
- Follow FIFO (First-In-First-Out) inventory method consistently.
- Track kitchen inventory, notify supervisor of low supplies, and record wastages.
- Discard expired or spoiled food items and follow waste management protocols.
- Identify and report hazards, near misses, incidents, and accidents.
- Uphold company principles and best practices.
- Support the Environmental Management System (EMS) within the department and company.
